21 weeks & counting...



I think I finally accepted that what you see in the picture is a bump - not just absurd weight gain!
Although, at the last doctor's appointment I actually lost weight. My theory - I was eating about 4 slices/day of Honey Whole Wheat Whole Grain Bread - and naturally and completely unintentionally went through some sort of detox. OOPS.

Physical Reality

Baby.

Yes.

Last week on family vacation (and by family - I mean all 6..and a half...Voss family-ites)...I felt this weird sensation.
Imagine squishing jello around in a balloon.
In my expert state of denial, I dismissed it.

Last night the sensation was back, not just one swoosh of jello from one side of the balloon to the other, but consistent swooshing.

"Mommy, I'm here. Big enough you can feel me swooshing."

Weird.
Definitely Cool.
Still weird.
Hello reality.

Making Healthy Things...Healthier

Matt LOVES homemade bread. Awhile back he requested a bread that was "heartier" than the standard honey/oatmeal bread i was making. I tried cracked wheat bread, which somewhat appeased his taste buds. Then I discovered a recipe with wheat berries...which was good but was missing something - the elusive flavor that you know is missing you just aren't sure what to add the next time. Then, in an attempt to see how much "healthy" stuff I could cram into one recipe I came up with the variation of my honey whole wheat bread. When Matt had 4 slices just at lunch one day, I passed his test. Next step - family trials - this weekend.


Honey Whole Wheat Bread (the original)
1 pkg yeast (dissolved in)
2 1/4 c. warm water
1/3 c honey 1 tbs salt
1/4 c. butter - softened
3. c ww flour
3-4 c. reg. flour

follow the standard rules of yeast bread:
mix together, knead until it sticks to itself
raise until it doubles in size (approx 45 min.)
punch down, 1/2, make into loaves
raise again (approx 45 min)
bake at 375 40-45 min

the healthier & HEARTIER version!
1 pkg yeast dissolved in 1/4 c warm water
2 c. warm kefir whey or kefir
1/3 c honey (I don't actually measure that - just eyeball it)
1 tbs salt
1/4 c butter - softened
1/4 c wheat germ
1/4 c wheat bran
1/4 c milled flax seed
1-1 1/2 c cooked wheatberries/wheat bulgur/steel cut oats
2 c WW flour
2-3 c reg. flour

standard instructions (as above)

Wheatberries/bulgur/oats concoction:
2 c boiling water
add 1 c wheat berries - boil approx 50 min
add 1/4 c bulgur & 1/4 c steel cut oats (more water if necessary) boil additional 10 min
cool to room temperature

I wish I could go into a long rant about all the health benefits of this bread, but to name a few (based on my limited research): kefir whey (or kefir) is a great source of protein as are steel cut oats, wheat bulgur, wheat bran, and wheat germ are all portions of a piece of wheat berry (I think), thus the benefits of the WHOLE grain and all the extra portions, and flax seed has lots of omega 3s - great for baby's developing brain.
