"OH..."
That was Matts response when he saw these
I blended a handful of spinach into the water before I poured it into the oats.
Then garnished with cinnamon, chopped pecans, flax seed meal, maple syrup, and maple-cinnamon walnut butter.
YUM!
(Don't judge, just trying to get my greens and Omega3s. And I hear oats are really good for breastfeeding moms. Okay - I'll eat them as much as possible!)

Arkansas - The Natural State
Two weekends ago, we went to Lake Leatherwood - outside of Eureka Springs, AR - for a picnic and a hike. Luke loved it, and Matt got to take some great photos, like the one above. Who knew one lonely tree on the shore of the lake could look so cool!

Dessert Contest

Apparently people in Arkansas are pretty competitive...chili contest, dessert contest...
Our community group has a "Rocktober" party for Halloween, including a dessert contest.
After swallowing our pride at the chili cook-off, and expending a decent amount of resources on 5 quarts of chili - I wasn't quite as pumped for another beating. I also had NO idea what dessert to make. Homemade ice cream? Maple twist rolls? Red velvet cake? I'm not actually that into making desserts, so I was at a loss. Georgia Sweets. I had them once at a different work function for Matt, and I thought they were melt-in-your-mouth, pure deliciousness. And they are INCREDIBLY easy. Graham crackers. Brown sugar. Butter. Pecans. Apparently, only Matt and I think they are totally addictive.
We didn't win.
